While there are nearly 900 different varieties of this herb exist, only some are edible. Those that are safe to use in food and medicine have an unforgettable woody flavor, and can be used in both sweet and savory dishes. While Sage’s essential oils have many medicinal benefits, they are wonderful for flavouring different kinds of oils, butters and sauces. Mostly used as a dry herb in cooking, Sage can also be used for smoking food by burning it in closed canisters and allowing the meat, fish or vegetables to absorb its wonderful aroma.
