TARRAGON

Resembling Anise in its flavor, tarragon has been used not only in cooking but also in beverages. While some may shy away from its borderline pungent scent, the herb has a rich flavor and is generously used in French and Mediterranean cuisines. The are several ways in which you can preserve tarragon and use later in any dish. The leaves, once removed from the stems, can be dehydrated, frozen, infused in oils, butters, salts and vinegar.
